It’s included because many people (including myself) count it as the first modern demonstration that Marvel movies could be good and it was the first building block for the MCU - a proof-of-concept if you will.

And Last Stand, but I’d never suggest someone watch last stand. ;)
You can skip it IMO. Just go X2 -> First Class -> DOFP.
Skip Origins as well, as you only need to read the meta about it. And also how Tatum tried to do for Gambit what Reynolds did for Deadpool.
